Chicken Gumbo Ingredients: * 1 tablespoon of olive oil * ¼ cup of flour * 1 ½ cup of chicken broth * ½ cup of onion (diced) * ½ cup of bell peppers (chopped) * ¼ cup of garlic (chopped) * ½ of a tomato (diced) * 3 cups of rice (steamed) * ½ pound of boneless skinless chicken breast (boiled and chopped into small pieces) * ½ cup of cup frozen okra * 2½ cups of celery (chopped) * 2 tablespoons of garlic powder * 2 tablespoons of onion powder * 1 dried thyme * 2 bay leaves * 1 cup of shredded carrots (uncooked) * 2 pinches of crushed red peppers Approximate cooking time: 45 minutes Preparation: * Add oil to a pot. * Add flour, while heat is low, and stir until flour turns golden brown. * Add garlic and onion powder. * Slowly add in broth, and stir for approximately two minutes. * Add additional ingredients, and simmer for 20 minutes, stir as needed. * Turn off pot and allow food to come to cook over an unlit isle.See the full content of this document
